New Year yumminess!
I made a puff pastry tart with caramelised onions, spinach, roasted tomatoes, courgettes and goat's cheese for the non-meat component of our New Year's Eve dinner. It was gorgeous!

ReplyDeleteI don't really have a recipe, I just made it up as I went along!
ReplyDeleteI roasted some slices of courgette and tomato in the oven (just put them on a baking tray and keep an eye on them so they don't go all dried out) and fried some onions with a bit of white wine and a sprinkle of sugar until they were nice and golden brown. And I wilted some spinach, added some nutmeg and black pepper, drained it and pressed the water out, and then when it was cool I chopped it up a bit.
Then I rolled out some shop-bought puff pastry and lined a tin with that, pricking the base. Then I put the onions in, followed by a layer of spinach, followed by the tomato slices around the edge, courgette in the middle, and halved slices of goat's cheese in between. Then I sprinkled the whole thing with rosemary and black pepper, brushed the pastry with egg, and baked it in a medium oven for about 25-30 minutes, until it looked like that!
